Kichesippi Phoenix Commemorates Reopening of Cheshire Cat Pub After Devastating Fire

OTTAWA, ON – A year to the day after it was destroyed by fire, and a month after it reopened following a $1.1 million rebuild, the return of The Cheshire Cat pub in Carp, Ontario is being marked with a new limited edition beer from a nearby brewery.
Kichesippi Beer has announced the release of Kichesippi Phoenix, a traditional Bavarian Rauchbier that will be available exclusively at the Cat and the brewery store.
Brewed in the Märzen style using 25% Vienna smoked malt, German Hersbrucker hops, and a genuine Bavarian lager yeast, the 5.8% abv and 22 IBU Phoenix will go on tap at the Cheshire Cat today, and will also be available in growlers at the brewery.
In addition to the regular version in kegs and growlers, a small amount has been set aside for cask conditioning, and a portion is also being barrel-aged for a special release in February.
Kichesippi Phoenix is planned to be available an annual release on January 28th of each year.
