Halcyon Barrel House Releases Waking Dreams Barrel Aged Sour

VANKLEEK HILL, ON – Halcyon Barrel House – the off-shoot of Beau’s All Natural Brewing dedicated to mixed fermentation and barrel aged beers – has announced the release of its latest limited edition brand.

Waking Dreams (6.5% abv) is a barrel aged sour gold beer that was fermented with organic haskap berries from Granby, Québec. It has the following notes:

Last fall we selected four barrels from our stock of young, lightly tart gold beer. which had been aged for three months. To each barrel we added a significant quantity of locally grown organic haskap, a small, dark blue berry. The barrels underwent a secondary fermentation and aging period over the winter, then were blended together for packaging and release this spring. Waking Dreams pours a deep cranberry colour, with light berry-pink foam that dissipates quickly. The aroma is of berries and wine, with a touch of fruit skins. The flavour is tart, with lots of juicy, berry wine character. Plenty of tannins round out the body. The beer finishes dry, with a pleasant, lingering taste of fruit skins.

Waking Dreams is available in 750 ml corked & caged bottles at the Beau’s retail store and BYBO delivery service while supplies last. It will also be pouring at the Beau’s St. Patrick’s Party taking place Saturday March 10th at Aberdeen Pavilion in Ottawa.
