HALIFAX, NS – 2 Crows Brewing has announced the release of its newest limited edition beer.
Special (4.4% abv) is a foedre aged Biere de Miel, and is described as follows:
Brewed with a base of Shoreline Malting Pilsner, wheat malt, raw wheat, and a bit of flaked wheat. Hopped in the boil with aged East Kent Golding hops, Hallertau Blanc, and Sterling. We added 85kg of warmed (but not boiled) NS Honey in hopback before sending everything directly to a foedre, where it fermented with a variety of our house cultures. After fermentation finished, we added 5kg of honeycomb to the foedre for a bump of honey character. We allowed the beer to condition in oak for about 4 months, before transferring back to stainless, priming with fresh honey, and packaging and can-conditioning. The result is a very fun, floral, and funky beer. Dry as a bone, with a soft honeycomb base, subtle petrichor and herbal aromatics.
Special is available now exclusively via the 2 Crows online store.
