I’ve Been Thinking Raspberry Brut Saison (6.5% abv) is described as follows:
Here is what’s happening here: we starting with a classic Saison (delicious and PEPPERY and a bit fruity) and fermented it to the point of total dryness (meaning every last bit of sugar was fermented into alcohol – hence, Brut). Then it was chilled down and almost 60 pounds of Fraser Valley raspberry puree added. Not ‘totally dry’ anymore.
