The Establishment Brewing Company Releases Rare Hearts Mixed Culture Beer with Strawberries

CALGARY, AB – The Establishment Brewing Company has announced the latest in a series of new and returning beers released this week to mark the brewery’s 4th anniversary.

Rare Hearts (6.1% abv):

We ain’t seen anything so pretty as the opaque, perfectly ruddy rose gold contained in these bottles. And, lucky for everyone, it tastes just as stunning. This blend of barrel-aged mixed culture beers smacks of freshly picked, perfectly ripe strawberries. Basically, it’s a dream of summer realized in winter.

Strawberries, while singularly tasty, can be terribly tricky to brew with. But sometimes, the trickiest ingredients make for the treatiest beers, so it just made sense to brew this to be 40% strawberries by weight. First, we selected three different base beers to experiment with: one Lambic-inspired, one a mixed culture Saison, and one a Brett Saison. Then we refermented each barrel on the fruit in isolation before blending the three to taste—and taste they do!

In addition to the strawberries that are the absolute star of this show, those who drink of Rare Hearts will be treated to balancing beats of pleasantly bitter hops, subtle acidity, and just enough funk to keep things spunky.
