Sonnen Hill Brewing Releases 2023 Edition of Spontaneous

CALEDON, ON – Sonnen Hill Brewing has announced the release of the 2023 vintage of a spontaneously fermented beer made using the brewery’s coolship.

Spontaneous (5% abv):

The base beer was made with aged and fresh hops, pilsner malt from Barn Owl Malt in Belleville, and raw spelt from K2 milling in Tottenham. After brewing, we let it cool naturally in our coolship and inoculate itself with the microbes in the air at our farm. The next morning we transferred it out of the coolship to start its long and slow spontaneous fermentation.

This is our third blend of Spontaneous and this batch has been aging since March 2020. It spent the first nine months in stainless steel tanks and then the next 27 in 500L French oak barrels. When it was three years old, we bottled it and it’s now ready to drink. This is one of our most complex blends and we can’t wait for you to try it!

IPA is available now at the Sonnen Hill taproom, retail shop, and online store. As with all of the brewery’s 750 ml bottle releases, $1 from each sale will go to local community organizations.
